Orange Shortbread Cookies
90 g butter
1 orange: finely grated peel plus 1-2 tb juice
35 g powdered sugar
135 g flour
1 pinch of salt
Mix butter, orange peel and powdered sugar until creamy.
Add flour, salt and orange juice. Mix to incorporate.
Refrigerate for about 30 minutes.
Roll the dough to 3-4 mm thickness.
Cut with a pastry wheel or cookie cutter, place on a baking tray (lined with parchment paper).
Bake in preheated oven at 175 deg C for about 12-14 minutes or until the edges turn golden.
