Cardamom & Orange Sandwich Cookies
75 g butter
65 g sugar, including as much vanilla sugar as desired
3 cardamom pods, finely ground seeds
185 g flour
5 g rice flour
1 pn baking powder
1 pn of salt
few tablespoons of orange marmalade
1-2 cardamom pods, slightly crushed
Mix butter, sugar and cardamom until smooth. Add the egg and whisk well until creamy.
Add flour, rice flour, baking powder and salt. Mix at low speed just to incorporate,
then use your hands to knead a smooth dough. Put the dough into a freezer bag and
roll to 3 mm thickness. Refrigerate about 1 hour. Slice the bag, cut out cookies.
Place on a baking sheet (lined with parchment paper) and bake in preheated oven
at 160 deg C for about 8-10 minutes.
Combine orange marmalade and cardamom pods, bring to a boil.
Let simmer for a few minutes to thicken, if the marmalade is very thin.
Spread the flat sides of half of the cookies with marmalade, top with the remaining cookies.
